Competition-Style Baby Back Ribs

Equipment
- Smoker capable of a steady 225F
- Heavy-duty aluminum foil

Ingredients
- 2 racks baby back ribs (about 2 lbs each)
- Yellow mustard, as binder
- 1/2 cup BBQ rub (equal parts brown sugar, paprika, salt, pepper, garlic)
- 1/2 cup apple juice
- 4 tbsp unsalted butter, cut into pats
- 1/4 cup brown sugar
- 1/2 cup BBQ sauce for glaze

PREP THE RACKS (20 min): Flip each rack bone-side up. Slide a paring knife under the silverskin membrane at one end, grab it with a paper towel for grip, and peel it off in one piece. Trim any loose flaps of meat or fat. Pat both sides completely dry.

SEASON: Squirt a thin layer of yellow mustard on both sides as a binder — you will not taste it. Apply BBQ rub heavy on both sides (about 2 tbsp per rack per side). Let the racks rest at room temperature for 15 minutes while your smoker comes to temp so the rub turns tacky.

FIRE THE SMOKER: Bring the smoker to a rock-steady 225F. Add 2-3 chunks of apple, cherry, or pecan wood. Wait for the smoke to run thin and blue before loading the meat.

SMOKE — Hour 0 to 3 (the '3'): Place racks bone-side down, not touching. Close the lid. Do not peek, do not spritz, do not open the lid for 3 hours. The rub needs uninterrupted heat and smoke to form the bark.

WRAP — Hour 3 to 5 (the '2'): Pull the racks. Lay two large sheets of heavy foil per rack, dull-side up. In the center of each, pour 1/4 cup apple juice, scatter 2 tbsp brown sugar, and lay 2 pats of butter. Place rack meat-side DOWN on top of the butter. Wrap tight, sealing all edges, and return to the smoker meat-side down for 2 hours. This is where the ribs get tender.

GLAZE — Hour 5 to 6 (the '1'): Carefully unwrap over a sheet pan (steam will scald — open away from you). Reserve the wrap juices. Flip the racks meat-side up back onto the smoker grate. Brush a thin coat of BBQ sauce over the top. Cook uncovered 45-60 minutes, brushing again once at the halfway mark, until the glaze tightens and turns glossy.

TEST FOR DONENESS: Pick up a rack with tongs from one end. It should bend to about a 45-degree angle and the surface bark should crack — not tear apart. Internal temp will read 195-203F between bones.

REST AND SLICE: Move racks to a cutting board, tent loosely with foil, and rest 10 minutes. Flip bone-side up, slice cleanly between each bone with a sharp knife, and serve.
If you want more bite (competition texture), cut the wrap step to 90 minutes. Fall-off-the-bone is technically overcooked.
How to serve
- Serve with extra warmed BBQ sauce on the side, pickles, and white bread.
- Sides that work: creamy coleslaw, baked beans, elote, mac and cheese.
Wrap leftover ribs in foil and refrigerate up to 3 days. Reheat wrapped in foil at 275F for 20 minutes with a splash of apple juice.
