Smoked Armadillo Eggs
Whole jalapeños stuffed with cheese, wrapped in seasoned sausage, jacketed in bacon, and smoked until every layer is cooked through. The Texas backyard party legend.

Ingredients
- 10 medium jalapeños
- 8 oz cream cheese, softened
- 1 cup sharp cheddar, shredded
- 1 tbsp BBQ rub
- 2 lbs breakfast sausage or plain ground pork
- 2 tbsp BBQ rub (for the sausage layer)
- 10 strips thin bacon
- 2 tbsp BBQ rub (for the outside)
- 1/2 cup BBQ sauce, warmed

PREP THE JALAPEÑOS: With gloves on, cut a slit down the length of each jalapeño, keeping the stem on. Carefully scrape out the seeds and membranes with a small spoon — don't split the pepper open, just clean the inside.

STUFF WITH CHEESE: Mix the cream cheese, cheddar, and 1 tbsp BBQ rub in a bowl. Stuff each jalapeño with the cheese mixture through the slit. Pinch the slit closed as best you can.

WRAP IN SAUSAGE: Season the ground sausage with 2 tbsp BBQ rub and mix well. Divide into 10 equal portions (about 3 oz each). Flatten each portion into a thin patty, place a stuffed jalapeño in the center, and mold the sausage around it into a smooth egg shape, sealing all seams.

WRAP IN BACON: Wrap each sausage-covered egg with a strip of bacon in a spiral, tucking the ends underneath. Secure with a toothpick if needed. Dust the outside with the final 2 tbsp BBQ rub.

FIRE THE SMOKER: Bring the smoker to a steady 275F with hickory, pecan, or apple wood. Wait for thin blue smoke.

SMOKE (1.5 hours): Place the armadillo eggs on a wire rack over a sheet pan. Smoke uncovered until the sausage internal reads 165F and the bacon is set and starting to crisp, about 90 minutes.

GLAZE (10-15 min): Brush every side with warmed BBQ sauce and return to the pit 10-15 minutes until the sauce tightens and turns glossy.

REST (10 min): Rest on a board so the cheese stops running. Slice each egg into 3-4 rounds so you can see all the layers when serving.
Fully seal the sausage around the pepper — any gap and the cheese will leak out during the cook. Cold sausage is easier to mold than room-temp.
How to serve
- Slice into rounds so the jalapeño, cheese, sausage, and bacon layers show — that's the wow moment.
- Serve with pickled onions and a dip of ranch cut with hot sauce.
Refrigerate whole up to 4 days. Reheat sliced rounds in a 375F oven for 8 minutes.
