Smoked Chicken Thighs (Competition Style)

    TRIM (15 min): Lay each thigh skin-side down. Trim the extra flap of meat and any exposed fat off the sides so the thighs sit uniform. Flip skin-side up. With a sharp knife, gently scrape the underside of the skin to remove the layer of fat — this is the competition trick that produces bite-through skin. Pull the skin tight so it fully covers the meat.

    SEASON: Season the meat side heavy with the rub. Flip skin-side up and season lighter — too much rub on the skin can turn gritty. Let sit 15 minutes so the rub sweats in.

    FIRE THE SMOKER: Bring the smoker to 275F with cherry and pecan wood. Wait for thin blue smoke.

    SMOKE (45-60 min): Place the thighs skin-side up directly on the grate. Do not touch them. Smoke until the skin is set and internal reads about 160F.

    PAN AND BASTE (30 min): Transfer thighs skin-side down into a half-size foil pan. Scatter butter pats over the top, drizzle with honey, and pour the apple juice around them. Cover tight with foil and return to the smoker 30 minutes. This step tenderizes and infuses moisture.

    GLAZE (15-20 min): Pull the thighs back to the grate skin-side up. Brush with warmed, thinned BBQ sauce and let the glaze tighten for 10 minutes. Brush a second coat and cook another 5-10 minutes until glossy. Pull at 185-190F internal — dark meat is fully tender at that temp.

    REST (10 min) and serve on butcher paper.

Pitmaster tip

Scraping the underside of the skin is the single move that separates competition thighs from home thighs. Skip it and the skin eats rubbery no matter how you cook them.
