Smoked Turkey Legs (State Fair Style)
Massive smoked turkey drumsticks with pink smoke rings, salty ham-like flavor, and crispy skin — the state fair classic you can make at home.

Ingredients
- 4 whole turkey legs (drumsticks), 1.25-1.5 lbs each
- 2 quarts cold water
- 1/2 cup kosher salt
- 1/4 cup light brown sugar
- 1 tbsp Prague Powder #1 (pink curing salt) — this is what makes them taste like the fair
- 1 tbsp whole peppercorns
- 2 bay leaves
- 4 cloves garlic, smashed
- 2 tbsp coarse black pepper (for the rub)
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Hickory and cherry wood chunks

MAKE THE CURE (24 hours before): Bring 2 cups water to a simmer with the kosher salt, brown sugar, Prague Powder #1, peppercorns, bay, and garlic. Stir until dissolved. Pour into a container with the remaining ice-cold water. The cure must be below 40F before the legs go in.

CURE (24 hours): Submerge the turkey legs in the brine, weighted down under a plate. Refrigerate exactly 24 hours — the Prague Powder is what gives you the pink color and ham-like snap. Under 18 hours and you get raw-tasting legs; over 36 and they turn salty.

RINSE AND DRY: Remove the legs, rinse briefly under cold water, and pat dry. Set on a rack over a sheet pan in the fridge, uncovered, 1-2 hours to dry the skin.

SEASON: Combine black pepper, smoked paprika, garlic powder, and onion powder. Do NOT add salt — the cure did the salting. Dust the rub evenly over each leg.

FIRE THE SMOKER: Bring the smoker to a steady 275F with hickory and cherry wood. Wait for thin blue smoke.

SMOKE (2.5-3 hours): Place the legs directly on the grate with space between them. Do not spritz or baste — you want the skin to bronze and tighten.

PULL AT 175-180F INTERNAL: Probe the thickest part of the meat away from the bone. Dark meat needs to run hotter than breast to break down the tendons; under 170F and it eats tough.

REST (15 min): Move to a rack and rest 15 minutes. The color deepens and the juices settle.

SERVE: Hand out one per person on a paper tray. Eat with your hands like at the fair — napkins mandatory.
Prague Powder #1 (pink curing salt, NOT Himalayan pink salt) is what makes them taste like the state fair. Without it, you get a plain smoked turkey leg — good, but not the thing you remember.
How to serve
- State fair style: paper tray, cold soda, no fork.
- Pull the leftover meat off the bone and pile onto sandwiches with BBQ sauce and slaw.
Refrigerate whole legs up to 4 days wrapped in foil. Reheat wrapped at 275F for 20 minutes.
